- In 8 inch pie dish, place butter. Microwave till melted. In small dish, beat Large eggs, lowfat milk, salt and pepper. Pour into pie dish. Cover with glass lid or possibly plastic wrap. Microwave at 70% power for 5 min. Sprinkle with cheese. Cover and cook 1 more minute. Let stand 2 min. Fold omelet in half. Can add in crumbled bacon, green onions and chives, lowfat sour cream, etc.
