- 1 x onion sliced and separated into rings
- 1 x green bell pepper coarsely minced
- 2 x zucchini thinly sliced
- 1 x eggplant cut into cubes
- 1/2 tsp fresh garlic chopped
- 2 x tomatoes coarsely minced
- 1 tsp dry basil leaves
- 1 tsp dry oregano leaves
- 1/4 tsp dry thyme freshly grnd black pepper
Direcciones
- Combine all ingredients in a microwave-safe dish. Cover. Microwave on high for 10 min, stirring every 3 min. Serve warm over baked potatoes, grains, or possibly pasta, or possibly serve cool as a salad.
