Receta Mixed Mushrooms In A Sesame Box

  • 250 gm packet of puff pastry
  • 1 x egg beaten
  •     sesame seeds
  •     chives and salad leaves to garnish
  • 4 x spring onions trimmed and sliced
  • 2 Tbsp. extra virgin olive oil
  • 500 gm mixed fresh mushrooms
  • 1/2 tsp grnd mace
  • 1 x salt and freshly grnd black pepper
  • 4 Tbsp. creme fraiche or possibly double cream

Direcciones

  1. Aga equipment:wire shell on third set of runners in roasting oven
  2. Roll out the pastry till 6mm thick then cut it into four oblongs about 75mm x 125mm.
  3. Place the pastry on a large baking sheet and carefully mark a rim of about lent around each box.
  4. Brush with egg and scatter with sesame seeds.
  5. Dont let the egg seal the edges of the pastry otherwise it won't puff up in the aga.
  6. Bake for 12 min or possibly till the boxes are a light golden.
  7. Carefully cut away the centres of the boxes to create lids.
  8. Prepare the mushroom filling while the pastry is baking.
  9. Cook the onions in the oil in a frying pan on the simmering plate till they arc soft then add in the sliced mushrooms and stir fry for 3 to 4 min.
  10. Add in the mace a little seasoning and the cream then continue heating till piping warm.
  11. Spoon the mushrooms into the prepared boxes and replace the lids. Serve with a salad leaf garnish with the: chives sticking up out of the boxes.
  12. Inspired by Chef/Patron Nik Westacott at Platters Restaurant in Chichester this is a recipe devised by a fungi fanatic to celebrate the wild mushroom season. It can also be made with regular cultivated mushrooms or possibly a selection of the exotic fungi available in supermarkets. You could always soak a few dry porcini and add in them to button mushrooms.
