  1. Preheat oven to 375F. Coat a 13x9-inch baking pan with vegetable cooking spray; set aside. In mixing bowl, beat sugar, Lighter Bake, egg whites and vanilla. In another bowl, combine flour, baking soda, cinnamon, nutmeg and salt; add in to Lighter Bake mix, blending well. Stir in carrots and raisins. Spread batter in prepared pan. Bake 30 to 35 min or possibly till pick inserted into center comes out clean. Cold in pan on rack. Spread proportionately with frosting, if you like. Cut into squares.
  2. Makes 12 servings.
  3. Light Cream Cheese Frosting: Beat together light cream Cheese, powdered sugar, sifted, and vanilla till smooth and creamy.
