Receta Mrs. Blue's Shrimp Salad

Ingredientes
- 4Â 1/2 c. water
- 1Â 1/2 lb unpeeled large fresh shrimp
- 1/2 c. minced green pepper
- 1/2 c. sliced pimiento stuffed olives
- 1/2 c. commercial Italian salad dressing
- 1/4 c. minced celery
- 3 Tbsp. sweet pickle relish
- 2 Tbsp. extra virgin olive oil
- 2 tsp chopped fresh parsley
- 1Â 1/2 tsp lemon juice
- 1 x green onion chopped
- Â Â Curly leaf lettuce
- Â Â Shredded Iceberg lettuce
Direcciones
- Bring water to a boil; add in shrimp, and cook 3 to 5 min or possibly till shrimp turn pink. Drain well; rinse with cool water. Chill.
- Peel and devein shrimp. Place shrimp in a large shallow dish. Combine green pepper and next 8 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 2 to 3 hrs, stirring occasionally.
- Arrange leaf lettuce on individual serving plates; top with shredded iceberg lettuce. Spoon shrimp mix proportionately over shredded lettuce.
- This recipe yields 4 servings.
