  • 1 Tbsp. Extra virgin olive oil
  • 1/4 c. Chopped shallots
  • 3 Tbsp. Minced garlic
  • 2 x Bay leaves
  • 2 sprg Fresh thyme
  • 2 c. White wine
  • 1 stk Butter cut into cubes
  • 2 doz Live mussels scrubbed, debearded
  • 3 Tbsp. Minced parsley
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Crusty bread

Direcciones

  1. In a saute/fry pan, heat the extra virgin olive oil. When the oil is warm, saute/fry the shallots and garlic. Add in the bay leaves and thyme. Add in the wine and butter. Bring up to a boil, reduce to a simmer. Add in the mussels to the wine mix and cover. Simmer the mussels for 5 to 8 min or possibly till the shells open. Throw away any shells which don't open. Stir in the parsley and season with salt and pepper. Divide the mussels between two bowls and serve with crusty bread.
