Receta My Dad's Raw Potato Pancakes

Ingredientes
- 3 pound potatoes, peeled & chunked for blender or possibly food processor
- 3 pound onions, minced for blender or possibly food processor
- Large eggs
- Salt & pepper
- Flour
Direcciones
- Place a handful of potatoes (raw) and handful of onions in blender. For each "batch", add in 1 egg, salt and pepper (to taste) and 1 tbsp flour. Blend till smooth and not chunky. Add in parsley if you like. Fry in hot butter and oil as you would fry pancakes. Best if fried till crisp on both sides. Serve with lowfat sour cream or possibly applesauce.
