Receta Naomi's Apricot Muffins

Ingredientes

  • 1 c. minced dry apricots
  • 1 c. boiling water
  • 1 x cupEsugar*
  • 1/2 c. softened butter or possibly margerine
  • 1 c. lite lowfat sour cream
  • 2 c. all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp. grated orange peel
  • 1/2 c. pecans orEwalnuts we prefer pecans and not minced too fine

Direcciones

  1. * Can use a scant c. of Splenda
  2. 1.Soak apricots in boiling water 5 min. Drain and throw away liquid.
  3. 2. Cream sugar and butter, add in lowfat sour cream, mix well.
  4. 3. Combine the dry ingredients and stir into creamed mix just to combine- do not overbeat. Batter will be VERY stiff. Do not worry. Don't add in liquid!
  5. 4.EAdd liquid removed apricot pcs and nuts and orange peel.
  6. 5. Pile up (the batter will almost be so thick which you can form balls) into greased muffin tins.
  7. 6. Heap them high-should make exactly 12.
  8. 7. Bake 18-20 min at 400 degrees.
  9. Naomi is a diabetic, as is my mom, so we've never made them with anything but Splenda.EBest hot with a little butter.
