Receta Navy Bean Tomato Florentine Soup

Ingredientes
- 2/3 cup Olive Oil
- 2 1/2 cups spanish onions
- 2 1/2 cups celery
- 2 1/2 cups carrots
- 2 1/2 tsp garlic powder
- 1 3/4 gals vegetable stock
- 3 qts tomatoes
- 2 1/2 cups tomato paste
- 1 1/4 tsps oregano leaves
- 5 ech bay leaves
- 1 1/4 tsps thyme leaves
- 5 ech fresh basil leaves
- 1 1/4 tsps salt
- 1 1/3 tsps pepper
- 2/3 cup sugar
- 2 1/2 lbs fresh spinach
- 1 qt navy beans
Direcciones
- Saute onion, celery, and carrots in olive oil.
- Add next 12 ingredients (everything except spinach, beans)
- Bring to a boil.
- Reduce heat and simmer for at least one hour until flavors are mingled.
- Add spinach & beans
- Turn soup a couple of times
- adjust seasonings if necessary
