Receta Neapolitan Pizza Dough Recipe Using a Dough Mixer
Making authentic Neapolitan pizza dough is easier than you think. This simple recipe will give you soft, airy dough perfect for your wood-fired oven.
Ingredientes
- 11lbs Italian Flour “00” (like Caputo 00 or Molini Pizzuti)
- 3.25 quarts of cold water (55°F)
- ½ oz of Fresh Yeast
- 5 oz of Salt
Direcciones
- 1. Pour the water into a dough mixer.
- 2. Add the yeast to the water and stir until it dissolves.
- 3. Start the Dough Mixer.
- 4. Gradually add the flour
- 5. Put in about 80% of the flour within the first 2 minutes of mixing.
- 6. Add the salt once most of the flour is in.
- 7. Keep mixing for about 15 to 20 minutes until the dough is smooth and elastic.
