Making authentic Neapolitan pizza dough is easier than you think. This simple recipe will give you soft, airy dough perfect for your wood-fired oven.

Ingredientes

  • 11lbs Italian Flour “00” (like Caputo 00 or Molini Pizzuti)
  • 3.25 quarts of cold water (55°F)
  • ½ oz of Fresh Yeast
  • 5 oz of Salt

Direcciones

  1. 1. Pour the water into a dough mixer.
  2. 2. Add the yeast to the water and stir until it dissolves.
  3. 3. Start the Dough Mixer.
  4. 4. Gradually add the flour
  5. 5. Put in about 80% of the flour within the first 2 minutes of mixing.
  6. 6. Add the salt once most of the flour is in.
  7. 7. Keep mixing for about 15 to 20 minutes until the dough is smooth and elastic.
  8. Thats it! Your dough is ready to rest and rise.
