Receta New Potato And Cucumber Salad With Fresh Herbs

Ingredientes
- 2Â 1/4 lb Red-skinned potatoes
- 2 med Cucumbers, peeled, seeded, diced
- 1/2 c. Minced red onion
- 1 c. Plain low-fat yogurt
- 6 Tbsp. Minced fresh dill
- 4 tsp Minced fresh mint
- 2 tsp Chopped garlic.
Direcciones
- Cook potatoes in large pot of boiling salted water till tender, about 18 min. Drain potatoes; cold. Peel potatoes. Cut into 3/4-inch cubes and place in large bowl. Add in cucumbers and onion. Whisk all other ingredients in small bowl. Add in to potatoes. Season with salt and pepper.
- (Can be made 8 hrs ahead; chill.)
- Serves 8.
