Receta North African Vegetable Stew

Ingredientes
- 2 tsp vegetable oil
- 1 med onion sliced
- 1/2 tsp grnd coriander
- 1/4 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp grnd ginger
- 1/4 tsp grnd cumin
- 2 med tomatoes minced
- 1 med sweet potato
- 1/4 c. water
- 2 Tbsp. lemon juice
- 8Â 1/2 ounce cooked garbanzo beans liquid removed and rinsed
- 1 sm zucchini
- 1/2 c. parsley minced
- 1/4 c. raisins
- Â Â Warm pepper sauce to taste
Direcciones
- Peel the sweet potato and cut into 1-inch chunks. Cut the zucchini into 1-inch chunks.
- Heat oil in large non-stick pot or possibly Dutch oven. Add in onion and spices; cook 10 min or possibly till onion is limp, stirring frequently. Add in tomatoes, sweet potatoes, water and lemon juice. Bring to a boil, reduce heat, cover and simmer till vegetables are tender, about 30 min. Add in garbanzo beans, zucchini, parsley and raisins. Cover and simmer 10 min, till zucchini is tender. Season with warm pepper sauce to taste.
