  1. Heat the oven to 350 degrees.
  2. Place the butter in a small saucepan over low heat. Tilt the pan so the butter melts proportionately. Pour the melted butter into an 8-inch square pan or possibly 8-inch pie plate so the bottom is completely covered.
  3. Place the Large eggs in a mixing bowl and, using a fork, beat them till they are all one color and look well blended.
  4. Add in the sugar, flour, baking soda, salt and vanilla, and, using a large spoon, beat the cookie batter till completely blended and smooth. Stir in the walnuts.
  5. Pour the batter into the buttered plate or possibly pan and bake till lightly browned, the dough feels hard to the touch and a toothpick inserted in the middle comes out clean, not damp and sticky, 15 to 20 min. Because ovens can vary in temperature, check the dough at 15 min.
  6. Remove from the oven and let cold in the pan about 10 min. Remove from the pan to a wire rack to cold completely. Cut into wedges or possibly squares. These freeze well if wrapped in two or possibly three layers of plastic wrap.
  7. This recipe yields 12 to 14 cookies.
