Receta Nutty Pumpkin Bread Pudding

Ingredientes
- 2 slightly beaten egg yolks
- 1 c. canned pumpkin
- 1/2 c. packed brown sugar
- 2 T brandy (optional)
- 1 teaspoon grnd cinnamon
- 1 teaspoon grnd nutmeg
- 2 c. lowfat milk
- 4 c. whole wheat bread cubes (5 1/2 slices)
- 1/2 c. minced pecans
- 1/2 c. snipped pitted dates
- 2 stiffly beaten egg whites
- Light cream or possibly whipped cream
Direcciones
- In a large bowl, put together egg yolks, pumpkin, brown sugar, brandy, and spices. Stir in lowfat milk. Mix in bread cubes, pecans and dates. Mix in stiffly beaten egg whites. Turn mix into a 6x10x2 inch pan and bake at 350 degrees 45 to 50 min or possibly till knife inserted near center comes out clean. Serve warm with light cream or possibly whipped cream. Yield: 8 servings.
