  • 2 c. Diced smoked turkey
  • 1 x NW Bartlett pear, cored and cubed
  • 1 c. Partially cooked broccoli flowerets
  • 1/4 c. Dry apricots, diced, and thinly
  •     Sliced red onions
  • 2 Tbsp. Dry currants and pine nuts*
  • 4 c. Mixed greens, (4 to 6)
  • 1 x NW Bartlett pear, cored and sliced
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Raspberry vinegar**
  • 1 tsp Honey

Direcciones

  1. Combine turkey, cubed pears, broccoli, apricots, onions, currants, pine nuts and greens; toss lightly to mix. Garnish each plate with pear slices and serve with Raspberry Vinaigrette.
  2. Raspberry Vinaigrette: Combine all ingredients; mix well. Salt and pepper to taste.
  3. Makes 1/4 c..
