Receta Old Fashioned Potato Salad With Sweet Pickles

Ingredientes
- 1Â 1/2 lb white-skinned potatoes peeled, and
- Â Â cut into 3/4" pcs
- 2 x hard-boiled Large eggs peeled, and
- Â Â cut into 1/2" pcs
- 1 c. diced celery
- 3/4 c. coarsely-minced red onion
- 3/4 c. nonfat mayonnaise
- 1/2 c. sweet pickle slices each quartered
- 3 Tbsp. sweet pickle juice from pickle jar
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Steam potatoes till tender, about 12 min. Cold. Place potatoes in large bowl. Add in Large eggs, celery, onion, mayonnaise, pickles and pickle juice. Toss gently to blend. Season salad to taste with salt and pepper. (Can be made 4 hrs ahead. Cover and chill.)
- This recipe yields 6 servings.
