  • 1 2/3 c. self-rising flour
  • 1 c. brown sugar, packed
  • 1/2 c. butter
  • Grated rind of 1 orange
  • 1/2 teaspoon cinnamon
  • 3/4 c. lowfat milk
  • 1 egg, beaten
  • GLAZE (Optional) :
  • Juice of 1 orange
  • 1/2 c. powdered sugar
  • Orange slice for garnish

Direcciones

  1. 1. Put together self-rising flour and brown sugar. Cut in butter to make coarse crumbs. Reserve 1 cup for topping.2. Add in rind, cinnamon, lowfat milk and egg. Mix just till moistened.
  2. 3. Scoop batter into a greased and lightly floured 8 inch tube pan or possibly 8 inch square pan. Sprinkle top with reserved crumbs.
  3. 4. Bake at 375 degrees for 30-35 min or possibly till a tester comes out clean. Cool in tube pan for 5 min before removing to serving dish.
  4. 5. If using glaze, put together orange juice with powdered sugar. Stir till blended. Drizzle over cake just before serving. Garnish with orange slice. Cut into 8 or possibly 9 pcs and serve warm.
  5. Tips: To make this cake with all-purpose flour, add in 1 1/2 tsp baking pwdr and 1/2 tsp salt to the all-purpose flour in step 1. Makes One 8 inch coffee cake.
