Receta Sour Cream Orange Coffee Cake

Ingredientes
- 2 c. flour
- 1 tsp baking pwdr
- 1/2 tsp salt
- 1 c. lowfat sour cream (1/2 pint)
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp orange extract
- Â Â Grated rind of one orange (2 tsp.)*
- 1 stk butter (1/4 lb.)
- 3/4 c. sugar
- 2 x Large eggs
- 1 c. minced nuts
- 1/2 c. sugar
- 2 tsp cinnamon
Direcciones
- Filling:Sift together flour, baking pwdr and salt. In second bowl combine lowfat sour cream, baking soda, vanilla and orange extract. In a large mixing bowl cream butter and grated orange rind. Add in sugar gradually. Add in Large eggs and beat well.
- Add in flour and lowfat sour cream mixtures alternately to batter. Pour half of batter into a greased and floured 9" springform pan (or possibly an 8" x 8" pan).
- Topping:Combine nuts, sugar and cinnamon. Sprinkle half of this mix over batter.
- Add in the rest of batter, spreading gently (a flat metal icing spatula or possibly a metal pie server works well for spreading batter). Top with remaining nut mix.
- Bake for about 45 min at 350 degrees F. Cake is done when toothpick comes out clean.
- *2 tsp. Spice Island brand bottled grated orange rind may be substituted for freshly grated rind.
