Receta Orecchiette With Broccoli And Sausage

Ingredientes

  • 1/4 c. Flavored Extra virgin olive oil
  • 4 x Garlic cloves, peeled and minced
  • 1 lb Italian sausage, a mix of warm and sweet according to your taste, cut into bite size pcs
  •     Salt and pepper to taste
  • 1 lb Broccoli rabe, cooked (reserve 1 c. of cooking water)
  • 1 lb Orecchiette
  •     Freshly grated Pecorino Romano cheese

Direcciones

  1. Heat oil and stir in garlic in a large saute/fry pan over medium heat. Add in the sausages and saute/fry till meat is cooked and loses its raw look. Salt and pepper to taste, and saute/fry one minute. Add in the rabe water. Raise heat and cook till sauce is warm. Meanwhile, cook orecchiette in rapidly boiling salted water till al dente. Drain orecchiette. Return liquid removed orecchiette to the pot. Place over mediumhigh heat and stir in 3/4 c. of broccoli rabe and sausage sauce. Using a wooden spoon, toss together for 1 minute. Remove from heat and pour into a large serving platter or possibly bowl. Spoon remaining sauce over the top. Sprinkle with Pecorino Romano cheese.
  2. Yield: 4 servings as a main course, 6 as a pasta course
