Receta Palikaria With Pomegranate

Ingredientes
- 1 c. canned fava beans, liquid removed and rinsed
- 1 c. canned lima beans, liquid removed and rinsed
- 1 c. canned chickpeas, liquid removed and rinsed
- 1 c. fresh or possibly frzn corn kernels
- 1 c. pomegranate seeds
- Â Â Or possibly cubed pickled beets
- 1 Tbsp. red wine vinegar
- 2 Tbsp. extra-virgin extra virgin olive oil
- Â Â Salt, to taste
Direcciones
- Makes 10 1/2-c.. VEGAN
- If you cannot find pomegranate seeds, try cubed beets instead.
- In large saucepan, combine beans, adding small amount of water. Simmer till heated through.
- In large bowl, add in beans, corn, pomegranate seeds or possibly pickled beets and salt to taste. Mix together gently.
- In small bowl, mix together vinegar, oil and salt to taste; pour over bean mix and gently mix.
- Makes 10 1/2-c..
