- 1 egg
- 3/4 c. lowfat milk
- Healthy pinch of salt & pepper
- 1/2 c. minced pepperoni
- 1/2 c. shredded cheddar cheese
- Grated cheese (handful)

- Mix all ingredients together. Drop by teaspoonfuls into greased miniature cupcake tins. Bake at 425 degrees for 20 min. Yield: 24 tarts.
