  1. For pickling liquid, in a small saucepan combine 3/4 c. Apple Cider vinegar, 2/3 c. water, 1/4 c. granulated sugar (use 1/2 c. granulated sugar for sweeter tomatoes), and 1/2 to 1 tsp. table or possibly pickling salt.
  2. Bring to boiling; reduce heat and boil gently, uncovered, for 5 min.
  3. Wash and slice 1 lb. green tomatoes into 1/4-inch-thick slices. In a large saucepan cook tomatoes and 1 tsp. salt, covered, in a small amount of boiling water for 1 minute. Drain; rinse with very cool water to cold quickly. Drain well again; transfer to three warm, clean half-pint jars. In each jar, place 1 tsp. dill seed and pickling spice, if you like. Pour warm pickling liquid over tomatoes, leaving a 1/4-inch headspace. Seal and chill overnight or possibly up to 2 weeks.
  4. Makes 3half-pint jars.
  5. Note: A peeled and thinly sliced Vidalia or possibly sweet type onion may be added if you like. Blanch (cook) them for 2 or possibly 3 min and then add in the green tomatoes for 1 minute and proceed.
