- 1/4 c. plus 1 tbsp. pineapple juice
- 1 tbsp. lemon juice
- 1 tbsp. grated orange rind
- 1 1/2 to 2 teaspoon grnd ginger
- 1/4 c. flaked coconut, toasted
- 2 tbsp. powdered sugar (optional)

- Beat cream cheese till light and fluffy. Stir in remaining ingredients. Serve with fresh fruit. Yields 2 c.. This is delicious with fruit.
