Receta Pink Elephant Meringues

Ingredientes
- 3 Large eggs
- 1/4 teaspoon cream of tartar
- 3/4 c. sugar
- 1/4 teaspoon red food coloring
- 1 quart. vanilla ice cream
Direcciones
- Heat oven to 275 degrees. Cover cookie sheet with heavy brown paper. Separate Large eggs, save yolks for later.
- Beat egg whites with sugar, 1 Tbsp. at a time. Add in food coloring and beat till stiff and glossy. Arrange stiff egg whites on 2 cookie sheets in shapes of elephants. Leave plenty of room between them and scoop out an indentation in the body for the ice cream.
- Put 1 chocolate chip on the face for an eye. Bake at 275 degrees for 45 min. Turn off oven and leave them in for 1 hour WITH THE DOOR CLOSED. Just before serving, fill each meringue body with a scoop of ice cream.
