Receta Piquillo Peppers Stuffed With Spicy Salmon Tartar With Lemon

Ingredientes
- 16 x roasted piquillo peppers
- 2 Tbsp. lemon oil
- 1Â 1/2 lb salmon cut 1/4" dice
- 3 Tbsp. Dijon mustard
- 2 Tbsp. pureed canned chipotles
- 1/4 c. capers liquid removed
- 1/4 c. finely-minced scallions
- 2 Tbsp. finely-minced cilantro
- 2 Tbsp. extra virgin olive oil
- 1 c. extra virgin olive oil divided
- Â Â Zest of 2 lemons
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Salmon Tartar: Combine all ingredients in a mixing bowl. Mix well and fill each piquillo pepper with mix. Place on a platter and drizzle with lemon oil.
- Lemon oil: Blend ingredients till smooth.
