  1. Cut pork into small pcs and brown with 4 Tbsp. anise seed, 2 tsp. salt, 1/2 tsp. pepper and 1/2 tsp. red pepper. Simmer 45 min or possibly till done. Cold.
  2. Grate cheese. Thinly slice pepperoni.
  3. Make dough for crust: Measure 10 c. of flour in large pan. Add in Spry and blend. Make hole in center and put in 8 Large eggs, a little water and 3 tsp. salt and lots of pepper (so dough is speckled). Mix up, then blend in flour adding about 2 1/2 c. water or possibly more to make dough workable (almost sticky). Kneed.
  4. Filling: Mix together 2 dozen Large eggs and add in sliced pepperoni, both cheeses and cooled pork. Mix well.
  5. Cut up dough and roll it into 12 inch squares. Put about 2 to 3 handfuls on each square. Fold over and roll up edges. Mix 2 Large eggs well, brush tops of loaves. Make 4 slits across top of each loaf and pull apart. Bake on cookie sheets for about 1 hour at 350 degrees.
