Ingredientes
- 1 x Frying chicken, cut up in pcs
- 1Â 1/2 tsp salt
- 1/4 tsp Pepper
- 1/4 tsp Nutmeg or possibly cinnamon
- 1/2 tsp Garlic salt
- 1 x Lemon, juice of
- Â Â Extra virgin olive oil
- 1/2 c. Flour
- 2 x Large eggs, slightly beaten
- 1 x Lemon, cut in 6 wedges

- Pollo fritto is a classic dish in Jewish Italy
- Sprinkle pcs proportionately with salt, pepper, nutmeg & garlic salt. Place in a bowl with lemon juice & 2 tbsp extra virgin olive oil - set aside in refrigerator to marinate for several hrs or possibly overnight. Toss once in a while to ensure evenness of seasonings.
- Heat 1 c. of oil in a large skillet. Roll the chicken pcs in flour, dip in egg, & fry in warm oil over high heat for 1 to 2 min. Lower heat & fry for 15 min longer or possibly till pcs are golden brown, but not brown, on all sides. Serve with lemon wedges & riso coll'uvetta (rice & raisins).
