Receta Pollo Loco Chicken

Ingredientes
- 1/4 c. corn oil
- 1/4 c. melted butter
- 1/4 c. onion chopped
- 2 Tbsp. finely-chopped garlic
- 1 tsp annatto pwdr
- 1/4 tsp grnd cumin
- 1 tsp dry Mexican oregano
- 4 Tbsp. lemon juice
- 4 Tbsp. orange juice
- 1 x chicken - (2 1/2 to 3 lbs) halved
Direcciones
- Combine oil, butter, onion, garlic, annatto, cumin, lemon and orange juices in a large shallow pan. Add in chicken halves, turning to coat well. Cover and marinate several hrs, or possibly overnight.
- Remove chicken from marinade, then cook over medium coals on barbecue grill, till browned on both sides and meat is done, turning and basting frequently, about 25 min.
- Cut chicken halves into pcs. Serve with beans and rice, corn or possibly flour tortillas, and fresh salsa.
- This recipe yields 6 servings.
