- 2 teaspoons ground coriander
- 2 teaspoons Mexican oregano (crushed)
- 2 tablespoons plus 2-3 cups water, divided
- 2 cups low sodium chicken broth
- 1/4 cup cornmeal
- 1 15-ounce can hominy, rinsed
- kosher salt and black pepper to taste
- juice of one lime
- Suggested garnishes: chopped fresh cilantro, tortilla strips, lime wedges
