  • 2 c. granulated sugar
  • 1 c. vegetable oil
  • 3 large eggs
  • 1 (16 ounce) can pork & beans, liquid removed
  • 2 c. all purpose flour
  • 1 teaspoon grnd cinnamon
  • 1/2 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1 c. raisins
  • 1/2 c. minced nuts (opt.)
  • 1 teaspoon vanilla extract

Direcciones

  1. Preheat oven to 325 degrees. In a large bowl, mix sugar, oil, large eggs and beans, beating till smooth. In a separate bowl, put together next 4 ingredients. Add in to bean mix, stirring just till combined. Stir in raisins and vanilla. Fill 5 greased and lightly floured 16 oz cans two-thirds full with batter. Place cans on a baking sheet and bake 45 to 50 min, testing for doneness with a toothpick. Cool completely on a wire rack before removing from cans. Bread may also be baked in 2 (8 1/2" x 4 1/2" x 2 3/4") loaf pans at 325 degrees for 50 to 55 min.
