Receta Pork Steaks With Coconut Rice

Ingredientes
- 2 Tbsp. Oil for cooking
- 1/2 c. Diced onion
- 2 Tbsp. Diced red bell pepper
- 3/4 c. Long-grain rice
- 1Â 1/2 c. Chicken stock
- 1 c. Unsweetened coconut lowfat milk
- 1/2 c. Toasted coconut
- 3 Tbsp. Minced cilantro plus
- Â Â Extra minced cilantro for garnish
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 2 x Pork loin steaks - (8 ounce ea)
- 2 tsp Jerk Rub see * Note
Direcciones
- Heat 1 Tbsp. oil and saute/fry onion and pepper till onion is translucent/soft. Add in rice and stir to coat grains in oil. Add in stock and coconut lowfat milk and bring to a boil. Reduce heat, cover and cook for 15 min. When rice is tender add in toasted coconut, cilantro, and salt and pepper to taste. Set aside and keep hot.
- Season pork steaks with Jerk Rub. In a saute/fry pan heat remaining oil, add in pork steaks and cook for 5 min per side. At Emeril's we serve our pork about medium. If you prefer, cook a little longer. Serve pork atop a generous portion of coconut rice.
