  1. Hear griddle and place the sliced onion on the griddle and let the onion become caramelized. Add the sliced pork and continue to grill on low.
  2. Combine the balsamic vinegar, brown sugar and olive oil and mix well. Pour this mixture over the pork and onions.
  3. In a large frying pan heat the tortillas on both sides. Plate the tortillas and sprinkle with cheddar cheese. Top the tortilla with the pork and onions and more cheddar cheese.

    Catherine: Good idea for leftovers. Could do this nicely with leftover pull pork..it's already sweet. Will remember this. Thanks. I added it to the group Porky Pig (pork etc. recipes) Hope you don't mind. N
