Receta Spicy Black Bean Dip

Ingredientes
- 2 c. Washed, cleaned black beans
- 6 c. Water, or possibly so
- 1 med Onion, minced
- 1 Tbsp. Chopped or possibly granulated garlic
- 2 Tbsp. Salt
- 2 c. Cooked black beans (from above)
- 1 x Jalapeno chile, chopped
- 1 sm Minced onion
- 1 Tbsp. Fresh minced garlic
- 1 c. Lowfat sour cream (or possibly use yogurt)
- 1 tsp Cumin
- Â Â Salt and pepper to taste
Direcciones
- First prepare the black beans: Put all ingredients in a suitable pot. Bring to boil, then reduce heat to low and simmer 2-3 hrs, or possibly till tender. Add in more water if needed, and skim foam off the top.
- Black Bean Dip: Puree the beans in a blender or possibly food processor. Add in rest, puree till smooth.. Refrigeratebefore serving.
- For a great smokey tasting dip, use chipotle(s) instead of jalapenos!
