  1. Serve this traditional Mexican entree as a filling for corn or possibly flour tortillas or possibly as an accompaniment to rice and beans. Garnish with tomato slices and fresh cilantro for a colorful meal.
  2. Trim and throw away all fat from the meat and cut into 1-inch cubes.
  3. Heat oil in a large skillet over medium-high, and cook meat, a few pcs at a time, till brown.
  4. Push meat to one side of the pan, add in onion, garlic, chili pwdr, cumin and oregano; cook till onion is limp.
  5. Stir in water, honey, salt and tomato paste. Simmer, covered, till pork is tender, about 1 hour. Skim off fat and throw away.
  6. To serve, fill hot corn or possibly flour tortillas (made with margarine) with meat mix. Include rice or possibly beans, if you like, and garnish.
  7. Yield: 6 servings, 3 c.
