Receta Potato salad
I have tried lots of recipes online for potato salad and none came close to really tasting good to me. This one I kind of made up from four different recipes and I think it is awesome. I am going to serve it with BBQ chicken and my mom's baked beans in just about an hour.
Ingredientes
- 6-7 Med potatoes cut chunky
- 2 tbsp white vinegar
- 1/2 cup onion diced
- 1/2 cup celery diced
- 4 eggs hard boiled and diced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp dill relish
- 3 tbsp sweet relish
- 1 tbsp garlic minced
- 1 tbsp parsley
- 1 tbsp cilantro
- 1 tbsp lemon juice
- 1 cup kraft mayo with olive oil
- 1 tbsp spicy brown mustard
- 2 tbsp yellow mustard
- sprinkle of paprika on top
Direcciones
- boil eggs in saucepan until hard boiled about 25 mins
- peel and cut up potatoes
- place potatoes in a large pot; boil potatoes in water until tender
- while these are cooking, in a large bowl mix all remaining ingredients
- except for paprika.mix thoroughly.
- when eggs are done, separate yolk and egg white
- set yolk aside, cut up egg white small
- cut egg yolks in half and make into crumbs
- add to mixture
- when potatoes are tender; strain them
- then add them to the mixture
- mix thoroughly
- sprinkle paprika on top and refridgerate for 30 mins to 1 hour
- before serving.
