Receta Potato Spinach Soup

Ingredientes
- 4 tbsp. butter
- 1/2 c. minced onion
- 2 c. minced, raw potatoes (can leave skins on)
- 1 1/4 c. water
- 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 (10 ounce.) pkg. frzn, minced spinach
- 3 c. lowfat milk
Direcciones
- Heat butter in large saucepan. Saute/fry onion till golden brown. Add in potatoes, water, salt, and pepper. Cover. Simmer, stirring occasionally, for 40 min or possibly till potatoes are tender. Cook spinach according to package directions. Drain. Add in to soup and puree all in blender. Return to pan. Stir in lowfat milk and bring to a simmer. Serves 4-6.
