Ingredientes
- 29 oz all-purpose flour
- 1 Tbsp salt
- 20 oz shortening
- 1.25 cups cold water
- 52 oz eggs
- 2 qts cream or half-and-half
- 2 qts milk
- 1.25 tsp salt
- 5 tsp white pepper
- 3 lbs swiss cheese, grated
- 1 lb bacon, chopped, cooked
- 8 oz parmesan cheese, grated
Direcciones
- Make pastry according to pastry recipe.
- Line twelve 8-inch pie pans with pastry, 5 oz per pan.
- Partially bake shells at 375F for about 10 minutes.
- Beat eggs; add cream, milk and seasoning.
- Sprinkle partially baked shells with swiss hceese, 4 oz per pie, and bacon or ham, 2 oz per pie.
- Pour egg mixture into shells, 5 oz per pie (about 2 cups).
- Sprinkle with parmesan cheese, 2 Tbsp per pie.
- Bake until custard is set and lightly browned - 180F internal end-poin temperature
