Receta Quick Black Beans And Rice Quesadillas

- 16 ounce Canned Black beans, liquid removed
- 15 ounce Canned Stewed tomatoes, undrained
- 1 c. Frzn corn
- 1 Tbsp. Dry onion
- 1 tsp Dry oregano
- 1/2 tsp Chopped garlic
- 1Â 1/2 c. Instant brown rice
- Â Â tortillas
- Â Â shredded cheese

- This sounds like a great filling for quesadillas. I mix up a similar black bean mix and heat it in the microwave (I do not use rice, but I should try it; also, I use taco seasoning to give it Mexican flavor). Then I lay a tortilla in a cooking-sprayed frying pan, sprinkle a small amount of shredded cheese, top with black bean mix, sprinkle a little cheese, then top with another tortilla. Heat for a few min on one side, then flip and heat on the other side.
- Bring tomatoes, beans, corn, and spices to a boil. Stir in rice and return to boil. Reduce heat, cover and simmer 5 min. Remove from heat and let stand 5 min covered.
