Ingredientes
- 1/4 c. Extra virgin olive oil
- 1 x Wild rabbit cut up
- 1 med Onion minced
- 2 x Shallots finely minced
- 1 can Stewed tomatoes undrained
- 1/2 c. Red wine
- 1Â 1/2 c. Sliced fresh mushrooms
- 2 med Carrots sliced
- 2 Tbsp. Brandy
- 2 Tbsp. Snipped fresh parsley
- 1 tsp Dry oregano leaves
- 1 tsp Dry rosemary leaves
- 1/2 tsp Salt
- 1/4 tsp Freshly-grnd black pepper
Direcciones
- In Dutch oven, heat oil over medium-high heat. Add in rabbit pcs and brown on all sides. Remove rabbit with slotted spoon and set aside. Add in onion and shallots to oil. Cook and stir over medium heat till tender. Add in browned rabbit pcs and remaining ingredients. Mix well and cook over medium heat till rabbit is tender (about 1 hour).
