Receta Risotte with Greens
What I love about this recipe is combining risotto, an Italian rice (rice – yeah a Low Country staple), with greens (yeah a Southern favorite). Being half Italian and loving Low Country cooking this recipe was a must-post for me. The greens I chose to use were turnip since they are a little more delicate than collards but you could also use spinach. Greens, of course, adds a little more of a Southern twist to the recipe, so that is, of course, what I used. In fact the original recipe that I found at Serious Eats used spinach. I altered the recipe a little to allow for my love of garlic and Parmesan cheese. Risotto is more than the type of rice product. It is cooked by a specific method. Risotto is cooked by sautéing the dried rice first (think Rice-a-Roni directions) and then adding liquid gradually and repeatedly. So it is a little bit of a labor of love. Not difficult just a project that requires you to stay focused.
Ingredientes
- 8 ounces tender greens leaves
- 8 cups of very hot water (kept on stove, covered)
- 4 tablespoons olive oil
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 3 teaspoons salt (1 teaspoon, then 2 teaspoons)
- 2 cups uncooked Arborio rice (risotto)
- 1 cup dry white wine
- 1 tablespoon butter
- 1 cup grated Parmesan cheese
Direcciones
- Wash greens and cut into pieces.
- Have 8 cups of water boiled and covered on stove.
- In a skillet on medium add 1 teaspoon of salt and sauté the onion and garlic for 5 minutes .
- Add the rice and brown on medium-high for 3-4 minutes.
- Add the wine and stir frequently until the wine is absorbed.
- Add 2 cups of the hot water.
- Cook stirring frequently for 3-4 minutes.
- Add the greens and stir often until the additional water is absorbed.
- Add 2 more cups of water and 2 teaspoons of salt.
- Stir until absorbed and add one more cup of water.
- Stir until absorbed.
- Add the butter, stir until blended in.
- Add Parmesan cheese and stir until blended.
- Serves: 8
- I served this with chicken but it would go well with fish as well.
