Receta Roasted Acorn Squash
A delicious and nutritious side dish that goes great with almost anything. It's sweet so kids will enjoy it too :)

Ingredientes
- Ingredients:
- Acorn squash
- ½ tsp of un-salted butter
- ½ tsp of brown sugar
- (Optional - sprinkle agave nectar on top either in place of the brown sugar to make it healthier or a mixture of both.)
Direcciones
- 1. Preheat oven to 400 degrees
- 2. Cut squash in half and gut out its innards.
- 3. Poke holes throughout the inside of each half, this will allow the butter and brown sugar to seep in and develop more flavor.
- 4. Put the butter and brown sugar in the cavity of the squash.
- 5. Put the squash in the oven (can do in a dish, on a cookie sheet or right on the rack) and reduce the heat to 350 degrees.
- 6. Bake for 30 minutes, occasionally basting the inside of squash with the butter/sugar mixture.
- 7. Let cool then either serve as is or you can fill it with something (i.e a quinoa mixture, brown rice, etc.) or you can dig (or peel) it out of its outer shell and serve it chopped or mashed.
