Receta Robust Turkey Vegetable Soup

Ingredientes
- 1 Tbsp. Canola Oil
- 1 c. Onion -- minced
- 1/2 c. Celery -- minced
- 2 c. Cooked Turkey -- minced
- 4 c. Turkey Broth
- 1/2 c. Green Beans cut in 1/2" pcs
- 1/2 c. Carrots -- cut into chunks
- 1/2 c. Broccoli cut in 1/2" pcs
- 1/2 c. Lima Beans
- 1/2 c. Corn
- 1/2 c. Zucchini -- sliced
- 3 med Tomatoes peeled and quartered
- 1 c. Cooked Brown Rice
- 1/2 tsp Thyme
- 1/2 tsp Oregano
- 2 Tbsp. Parsley
- Â Â Salt and Pepper to taste
Direcciones
- In a large soup kettle, heat oil and saute/fry onions and celery. Saute/fry till vegetables are soft.
- Add in turkey, stock, all vegetables, rice and herbs.
- Simmer 10-12 min till vegetables are tender crisps. Stir in parsley and season with salt and pepper.
- NOTES: Prepare the day before, cover and chill for flavors to blend.
