  • 1 Tbsp. Canola Oil
  • 1 c. Onion -- minced
  • 1/2 c. Celery -- minced
  • 2 c. Cooked Turkey -- minced
  • 4 c. Turkey Broth
  • 1/2 c. Green Beans cut in 1/2" pcs
  • 1/2 c. Carrots -- cut into chunks
  • 1/2 c. Broccoli cut in 1/2" pcs
  • 1/2 c. Lima Beans
  • 1/2 c. Corn
  • 1/2 c. Zucchini -- sliced
  • 3 med Tomatoes peeled and quartered
  • 1 c. Cooked Brown Rice
  • 1/2 tsp Thyme
  • 1/2 tsp Oregano
  • 2 Tbsp. Parsley
  •     Salt and Pepper to taste

Direcciones

  1. In a large soup kettle, heat oil and saute/fry onions and celery. Saute/fry till vegetables are soft.
  2. Add in turkey, stock, all vegetables, rice and herbs.
  3. Simmer 10-12 min till vegetables are tender crisps. Stir in parsley and season with salt and pepper.
  4. NOTES: Prepare the day before, cover and chill for flavors to blend.
