Receta Ruth Gole's Devils Food Cupcakes

Ingredientes
- 1 1/4 c. sugar
- 2 sq. baking chocolate
- 3 T water
- 1/4 pound butter, scant
- 1 c. buttermilk or possibly sour lowfat milk
- 1 teaspoon soda
- 1 egg, beaten
- 2 c. flour
- 1 teaspoon vanilla
- 2 sq. baking chocolate
- 2 T butter
- 3 T very strong coffee
- 1 teaspoon vanilla
- 1 1/4 c. powdered sugar
Direcciones
- Cook sugar, chocolate and water over low heat till smooth, dissolve butter in mix; let cool. Mix buttermilk and baking soda in large bowl; add in beaten egg, mix. When chocolate mix is cool, add in to buttermilk mix. Add in vanilla and mix well. Mix in flour till smooth.Fill muffin papers 2/3 full. Bake at 350 degrees for 20-25 min or possibly mini muffins for 8-10 min. Makes 20 full size or possibly 48 small cupcakes.
- Heat chocolate and butter together over low heat, or possibly in microwave. Add in coffee and vanilla; mix well. Add in powdered sugar gradually and mix to spreading consistency.
