Receta Sauteed Cherry Tomatoes And Tarragon On English Muffins

Ingredientes
- 1 tsp extra virgin olive oil
- 1/4 c. diced shallots
- 2 c. halved cherry tomatoes
- 1/4 tsp freshly grnd black pepper
- 1/8 tsp salt
- 1 tsp minced fresh tarragon
- 3 ounce thinly sliced part-skim mozzarella cheese
- 2 x english muffins, split and toasted
Direcciones
- 1. Heat oil in a medium nonstick skillet over medium-high heat. Add in shallots, and saute/fry 2 min. Add in tomatoes, pepper, and salt; saute/fry 2 min. Remove from heat; stir in tarragon.
- 2. Preheat broiler.
- 3. Divide cheese proportionately among muffin halves. Place muffins on a baking sheet, and broil 1 minute or possibly till cheese melts. Spoon 1/3 c. tomato mix over each muffin half. Serve immediately.
- Yield: 2 servings (serving size: 2 muffin halves).
