Receta Sauteed Spinach With Dried Cranberries And Toasted Pine Nuts

Ingredientes
- 1/2 c. Dry cranberries
- 3/4 c. Hot water
- 1 Tbsp. Pastis (Pernod)
- 1/4 c. Extra virgin olive oil
- 3 lb Fresh spinach
- 1 x 1/2 tsp. of orange flower water (up to 1)
- 1/3 c. Pine nuts, lightly toasted
- Â Â Salt and pepper
Direcciones
- 1. At least 30 min before you plan to cook the spinach, place the cranberries in a small bowl and cover with the hot water and pastis. Let soak for at least 30 min or possibly longer.
- 2. Heat the extra virgin olive oil in a large skillet over medium-high heat. Add in the spinach and cook, tossing it constantly till wilted, 4 to 5 min.
- Sprinkle the greens with the orange flower water and then fold in the liquid removed cranberries and pine nuts. Season all with salt and pepper.
