Receta Sesame Noodle Salad With Chicken And Asparagus

Ingredientes
- 3 Tbsp. chicken broth
- 1/4 c. soy sauce
- 1 tsp chili paste, or possibly 1/2 tsp. dry chili flakes
- 1/2 lb boneless skinless chicken breast, cooked
- 1 Tbsp. toasted sesame seeds
- 1 lb asparagus, thin
- 3 x green onions, chopped
- 1 Tbsp. chopped red pepper
- 2 Tbsp. shredded carrots
- 2 sm cucumbers, diced
- 8 ounce linguine
- 1 Tbsp. sesame oil
- 3 clv garlic
- 1 Tbsp. chopped ginger
- 1 Tbsp. red wine vinegar
- 1 Tbsp. brown sugar
- 3 Tbsp. peanut butter
Direcciones
- Cook linguine, rinse and cold. Toss with a little sesame oil. Process ginger, garlic, vinegar, brown sugar, peanut butter, chicken stock and soy sauce. Add in sesame oil a little at a time to incorporate and add in chili paste. Process till well blended. Shred chicken into 2 inch pcs and add in to linguine. Add in sauce and sesame seeds. Toss well. Chill. Cook asparagus al dente. Slice on the diagonal into 2 inch pcs. Add in to salad and toss. Garnish with green onions, red pepper, shredded chicken and cucumbers.
