  1. Blanch the tomatoes by plunging them into a pan of boiling water for 30 seconds. Take out the tomatoes, then peel, deseed and crush them
  2. Heat up half of the extra virgin olive oil in a saucepan over a high heat
  3. Gently fry the tomatoes and let them reduce for 4 min
  4. Add in the honey and cinnamon
  5. Reduce while stirring till the mix is dry and almost caramelized
  6. Heat up the rest of the extra virgin olive oil in the tajine (or possibly Dutch oven) over a medium heat
  7. Fry the minced shallots for 4 min till they become transparent
  8. Stir well, and then add in the garlic, saffron, paprika and Espelette pepper
  9. Next, add in the rabbit thighs, and stir them well into the shallot and spice mix
  10. Add in the celery, carrots, thyme and sage
  11. Add in the glass of stock and stir through well
  12. Cover the dish and let it cook over a low heat for 1 hour
  13. Add in the tomato and honey confit, and mix well
  14. Add in salt and pepper to taste
  15. Cook for a further 15 min
  16. Toast the sesame seeds and pine nuts in a very warm frying pan for 3 min.
  17. The seeds and nuts should be nicely browned
  18. Before serving, sprinkle the dish with the toasted seeds, and then sprinkle the finely minced basil leaves on top.
