Receta Shanghai Turkey Cutlet

Ingredientes
- 9 1/3 qts sherry
- 9 1/3 cups brown sugar
- 6 1/4 qts water
- 4 1/8 cups soy sauce
- 3 1/8 cups sesame seeds
- 2/3 cup gunger, ground
- 12 1/2 lbs mushrooms, sliced
- 12 1/2 cups flour
- 2/3 cup paprika
- 1/4 cup black pepper
- 75 lbs turkey cutlets
Direcciones
- Combine fliour, paprika, and pepper for dredging mix. Dredge all cutlets.
- Brown off cutlets in tilt skillet. Arrange in hotel pans.
- Saute sliced mushrooms and scatter over cutlets in pans.
- Combine all sauce ingredients (first six) in sauce pot, bring to a boil. Let simmer approx. 15 minutes. Pour sauce over cutlets, cover pans tightly and finish cooking of cutlets in 300F oven fro 15-20 minutes.
- Garnish and serve (scallion rounds are recommended).
