Receta Shanghai Turkey Cutlets

Ingredientes
- 2 cups, 2 Tbsp flour
- 2 Tbsp paprika
- 1 Tbsp ground black pepper
- 12 lbs turkey cutlets (96 cutlets)
- 2 lbs mushrooms- thinly sliced
- 6 cups sherry
- 1 1/2 cups brown sugar
- 2 pints water
- 2/3 cups reduced sodium soy sauce
- 1/3 cups sesame seeds
- 2 Tbsp ground ginger
Direcciones
- Combine flour, paprika, and black pepper. Mix thoroughly.
- Dredge cutlets in flour mixture.
- Spray skillet with vegetable spray and brown 2 minutes. Turn and continue browning 3 minutes.
- Remove cutlets and arrange in 12x20x2 inch pan.
- Saute mushrooms in skillet 5 minutes. Top cutlets with mushrooms.
- Add remaining ingredients to skillet and bring to boil.
- Pour over cutlets.
- Cover tightly and bake 25 minutes at 300 F, until internal temperature of 160F is reached.
- Sauce will thicken upon standing.
