Receta Shrimp, Tuna Or Crab Croquettes

Ingredientes
- 3/4 pound meat (shrimp, tuna or possibly crab)
- 3 T Crisco
- 1/2 c. flour
- 1/2 c. lowfat milk
- 2 T minced onion or possibly dry flakes
- 1 T parsley
- 2 teaspoon lemon juice
- 1/4 teaspoon salt
- Dash pepper
- Dash paprika
- 3/4 c. fine dry bread crumbs
- 1 egg, beaten
- 2 T water
- 1 pkg. (8 ounce) frzn peas with cream sauce or possibly 1 can English peas thickened with lowfat milk
- Crisco for frying

- Chop meat fine about 2 cups, heat 3 tbsp Crisco in skillet. Add in flour then lowfat milk, cook till very thick and smooth. Remove from heat. Add in onion, parsley, lemon juice and seasoning. Stir in meat.Preheat Crisco for deep frying to 350 degrees, shape into balls about 1/4 cup for each, roll in bread crumbs. Put together egg and water dip balls into egg mix then in bread crumbs again till well coated. Deep fry for about 3 min or possibly till brown; drain on paper towel. Prepare peas, spoon over croquettes and serve.
